Olizzi Pasta Recipe with Basil Sauce and Asparagus

 Enjoy our wonderful pasta recipe with the rich flavor of basil, and the finishing touch of parmesan and asparagus!

Our Ingredients (2 People recipe)

  • 250 gr pasta (My choice was pappardelle pasta, I recommend you use a similar pasta.)
  • 8 bunch asparagus, sliced into 1-inch pieces of asparagus (You can use any green vegetable you want instead of asparagus.)
  • 40/50 g fresh basil, chopped
  • 1 whole ripe avocado
  • 3 cloves of garlic
  • 60 g walnuts
  • 3/4 tablespoon of Olizzi Premium olive oil
  • A sprig of spring onions
  • Zest of 1/2 lemon
  • Salt and black pepper to taste

To decorate it;

We make the final touch with parmesan cheese. (If you don't have parmesan cheese, you can use any cheese with a strong flavor.)

Tips

  • Depending on the harvest time of the avocado, the size of the pasta water will vary. Therefore, you can add the amount of water to the pasta in a controlled manner.
  • To separate the stalks of asparagus; If you apply force to the part close to the root, it will break by itself.

How is it done?

  • Prepare ice or cold water to shock the ingredients with cold water.
  • Then start boiling water in a potrero. Add salt to boiling water. (10 g of salt per 1 liter of water)
  • Add the asparagus to the boiling water first. After waiting for about 15 seconds, take it from the boiling water, flash-shock it in cold water and leave it there to stop cooking.
  • After taking the asparagus out of cold water, you can cut it as you wish. (I cut it small.)
  • Add basil and mint to the same boiling water and wait 5 seconds. Then take the basil and mint from the water and dry them with a napkin.
  • In the meantime, you can cook your pasta in another pot according to the cooking instructions on it. It is recommended to boil the pasta for 1-2 minutes less than the time given for it to be al dente.

Preparation of the Sauce:

  • First, dice the walnuts with the food chopper and drizzle Olizzi Premium olive oil on top, add the garlic and pass it through the food chopper again.
  • Then add basil, mint, avocado, salt and pepper, and 1 or 2 scoops of pasta water to the food chopper. Mix the added ingredients in the food chopper and get a solid sauce.
  • In a mixing bowl, take the sauce, chopped green onions, asparagus, and lemon zest, and add the whole pasta. Add 1-2 scoops of the pasta water so that the delicious sauce meets the whole pasta beautifully.

If you wish, you can decorate your pasta with the ends of the chopped asparagus. We recommend grating parmesan on it after consuming it.
