Tomato Selection: The Secret to Flavor
Tomatoes are the stars of this salad. By mixing varieties, we create a rich and layered flavor profile. For this recipe, we use pink tomatoes, field tomatoes, and cherry tomatoes. Each brings its own unique flavor to the salad. Cutting the tomatoes into bite-sized, irregular pieces not only looks appealing but also makes them easy to enjoy.
Ingredients
- Pink tomatoes (halved)
- Field tomatoes
- Cherry tomatoes (sweet)
- Black olives (pitted and diced)
- Raw almonds
- Sea salt (flake salt)
- Chili pepper (optional, whole)
- Lemon zest
- Olizzi Everyday Olive Oil (for cooking)

- Fresh basil

Step-by-Step Preparation

Prepare the tomatoes:
Wash the tomatoes and cut them into small, bite-sized pieces. Remove the watery, seedy parts to prevent the salad from becoming soggy and to concentrate the flavors. Arrange the tomatoes on a serving plate and sprinkle generously with sea salt. Flake salt will dissolve easily and allow the tomatoes to absorb the seasoning. -
Make the almond and olive dressing:
Heat a pan and add a generous amount of Olizzi Everyday Olive Oil. Add raw almonds and, if desired, whole chili peppers. Toast the almonds until golden. Remove the chili peppers before serving. The mild flavor and heat-resistance of Olizzi Everyday highlight the natural taste of the almonds. Mix the toasted almonds with the diced black olives. Add a little more olive oil to create a warm, rich dressing and finish with a pinch of lemon zest. -
Assemble the salad:
