Ingredients:

  • Chestnut pumpkin (preferred)
  • Medium potato
  • Small onion
  • A few garlic cloves

Pumpkin Soup Preparation: Step by Step

  1. Prepare the Vegetables:
    Roughly chop half an onion, quarter the garlic cloves, and cut half a peeled potato into large cubes. Carefully peel the pumpkin as you would an apple, dice it, and remove seeds and stringy parts.
  2. Create the Aromatic Base:
    Heat a saucepan over medium heat and add a generous amount of Olizzi Baby Organic Olive Oil. Once warm, sauté the chopped onion and garlic until translucent and fragrant. Avoid overcooking, especially for babies.
  3. Cook the Pumpkin and Potatoes:
    Add the pumpkin and potato to the sautéed onions and garlic. Pour in about 500 ml of beef or vegetable broth, enough to cover the vegetables. Since pumpkin water content varies, you may add more broth during cooking as needed. Do not add salt—the broth provides sufficient flavor.
  4. Boil and Puree:
    Cover the pot and simmer until the vegetables are fully soft. Once cooked, use a hand blender or food processor to puree until smooth. If the soup is too thick, adjust consistency with a little more broth or a splash of Olizzi Baby Organic Olive Oil.
  5. Serve:
    Taste and adjust if needed. Serve warm, ensuring it’s a safe temperature for your little one. This soup is also a great starter or light meal for adults.
