What is One-Pot Pasta and Why is it So Popular?

One-pot pasta is an innovative cooking method where all ingredients—pasta, fresh vegetables, sauce, and water—are cooked together in a single pot. It’s perfect for those looking for quick, practical kitchen solutions. Less prep time, easy cleanup, and incredibly delicious results are the main reasons one-pot pasta has become so popular. This way, you can enjoy the taste of homemade pasta effortlessly.

The Secret to the Recipe: Quality Ingredients and Olizzi Premium Organic Extra Virgin Olive Oil

As Chef Ezgi Bal highlights, choosing the right pasta enhances the flavor. In this recipe, we use thick-cut tagliatelle, but you can choose any pasta you like or one that holds sauce well.

The key ingredient that ties everything together is, of course, high-quality extra virgin olive oil! In our one-pot pasta, Olizzi Everyday and Olizzi Premium Organic Extra Virgin Olive Oil take center stage. Their rich flavor enhances the natural aromas of garlic and vegetables, ensuring your dish is not only delicious but also healthy.

Ingredients:

  • 400 g tagliatelle (or pasta of your choice)
  • Fresh garlic (a few cloves, optional to add more)
  • Mini Cretan zucchini
  • Cherry tomatoes
  • Fresh basil
  • Sea salt
  • Black pepper
  • Olizzi Everyday Extra Virgin Olive Oil
  • Olizzi Premium Organic Extra Virgin Olive Oil
  • Hot water (400–500 ml to start, more as needed)

Step-by-Step Instructions:

  1. Heat the Pan and Add Olive Oil: Heat a cast-iron pan over medium heat. Generously coat the bottom with Olizzi Everyday Olive Oil and wait until warm.
  2. Add Garlic and Salt: Lightly crush the garlic cloves and add them whole to the pan. Sprinkle a little sea salt over the garlic to enhance flavor and aid in cooking. Repeat this process with other ingredients to layer the flavors.
  3. Cook the Zucchini: When the garlic starts releasing its aroma, add the chopped zucchini and sauté with a pinch of salt. Stir until the zucchini starts to brown slightly.
  4. Add Tomatoes and Pepper: Once the zucchini begins to color, add halved cherry tomatoes and a pinch of black pepper. The tomatoes will start to release juice. Cover briefly to help them soften.
  5. Add Pasta and Basil: Add the pasta to the pot, along with a sprig of fresh basil to infuse flavor.
  6. Add Hot Water and Cook: Pour hot water into the pot, just enough to cover the pasta (approximately 400–500 ml). Stir frequently, allowing the pasta to absorb the water. Add more water gradually if needed. Cook until the pasta is al dente—soft but firm to the bite.
  7. Final Touches: When the pasta reaches the desired consistency and absorbs all the water, add remaining fresh basil leaves. Drizzle Olizzi Premium Organic Extra Virgin Olive Oil on top for extra flavor and aroma.
