Easy Vegetable Soup Recipe for Babies – Made with Potato, Carrot & Broccoli

Prepared in collaboration with Chef Ezgi Bal, this special recipe allows your little gourmets to benefit from the vitamins and minerals of different vegetables, while enhancing their taste experience with Olizzi Baby Organic Extra Virgin Olive Oil.

Why Vegetable Soup?

When babies start solids at around 6 months, they are usually introduced to individual vegetables (such as potato, carrot, or sweet potato). Once these are well tolerated, it is time to bring different flavors together. Vegetable soup allows your baby to receive various vitamins and minerals in a single meal.

In this recipe, we use basic vegetables such as potato, carrot, and broccoli to prepare a satisfying and nutritious soup that your baby can easily consume. Families may also choose to cook these vegetables individually using the same method.

Ingredients

  • 1 medium potato
  • 1 carrot
  • 1 small head of broccoli
  • ½ small onion
  • 1 clove of garlic (use half)
  • Olizzi Baby Organic Extra Virgin Olive Oil
  • Whey (from our previous labneh recipe) or unsalted vegetable/meat broth

Olizzi Baby Vegetable Soup Preparation: A Step-by-Step Flavor Journey

  1. Prepare the Vegetables: Wash the potato, carrot, and broccoli thoroughly and peel them. Cut into large cubes. Peel the onion and garlic and chop very finely (about one-seventh of an onion and half a clove of garlic is enough). You can place the potato in water to prevent it from browning.
  2. Create the Aromatic Base: Heat a pot and generously add Olizzi Baby Organic Extra Virgin Olive Oil. Once the oil is warm, add the chopped garlic and then the onion. When preparing baby soup, avoid overcooking to preserve both the texture and nutrients of the vegetables; gentle heating is sufficient.
  3. Cook the Vegetables: Add the chopped potato, carrot, and broccoli to the pot with the onion and garlic. Add enough whey (or vegetable/meat broth) to just cover the vegetables. (Using the whey left over from homemade labneh adds extra nutritional value. Remember to consume it quickly!)
  4. Boil and Puree: Cover the pot and cook over medium heat until the vegetables are completely tender (about 15–20 minutes). Once cooked, turn off the heat. Do not strain the soup; we will blend everything together. Using a hand blender or food processor, puree until smooth. For babies, keep the texture thick — more like a puree than a liquid soup. Add a little water or broth if needed to adjust the consistency. This recipe makes at least two to three servings.
  5. Serve: Divide the prepared vegetable soup into small bowls or baby-friendly containers. Drizzle with a little more Olizzi Baby Organic Extra Virgin Olive Oil before serving. Make sure the temperature is safe for your baby. Don’t forget to taste it yourself — the balance of olive oil and vegetables will surprise you!
